CINNAMON ROLL BISCUITS

 Making bread is fun and stress reducing, but when you don't have time or in a lazy mode (like me, haha), you may want this kind of recipe.




As this Cinnamon roll is not a bread and does require yeast, so no kneading or waiting, all you have to do is mixing, folding, rolling, cutting and baking it ^^. And you can do all of them in less than half an hour (believe me, I already made it). 
Actually it's a biscuit in a shape of cinnamon bread, so the method is the same, mix the flour mixture with your fingertips until it looks like breadcrumbs, it's the most important step, as the small bit of the butter will make the biscuits fluffy. 
For the icing glaze, it's up to your taste, you can have it or not but for me I love to drizzle it and feel the sweetness of the sugar and the look ^^.

CINNAMON ROLL BISCUITS
Make 10-11 pieces


Dough
410g .............................. Cake flour
........................................ Pinch of salt
1 1/2 Tbsp ...................... Baking powder
2 Tbsp ............................ Granulated sugar
115g ............................... Unsalted butter, cut into pieces
280ml ............................. Milk
1 Tbsp ............................ Lemon juice (or Vinegar)

Filling
45g ................................. Unsalted butter, soft
50g ................................. Granulated sugar (I use light brown sugar)
3/4tsp ............................. Cinnamon powder

Topping
45g ................................. Melted unsalted butter

Glaze
100g ............................... Icing sugar
3-4tsp ............................. Milk




Preheat an oven to 220C
Brush 23cm pan with butter.


 Mix the milk and lemon juice together, set aside.


 Whisk flour, salt, baking powder and sugar together.
Put the butter into the bowl.
Mix with your finger tips.


 Until fine crumbs formed.


 Pour the milk and lemon juice mixture into the bowl.


 Mix until fully combine.


 Sprinkle the top of work surface with flour, and place the dough on top.
Press to level the top.


 Fold the dough 4-5 times.


 The dough will be smoother.


 Sprinkle the top with more flour and press until 32x20 cm in size.
Smear the soft butter over the dough.


 Mix the granulated sugar and cinnamon together.
Sprinkle the mixture over the dough.


 Roll into cylinder.


 Cut into 10-11 pieces.


Place into the prepared pan.
Bake for 17-20 minutes.


 Brush the top of the biscuits with melt butter and let it cool.


 Mix the icing sugar and milk together.


Drizzle the glaze over the biscuits and let it set before serving.
